Last evening I prepared this paella for a guest (and her husband) who had participated in  a paella cooking class  I conducted more than 30 years ago.  Memories like this are priceless rewards that are possible only after a long lifetime in the restaurant business—4 decades for me and counting. Thanks to all of you who contribute to memories like this that motivate me to get to the stove every day.  Bring your friends and family to Cafe Capriccio’s Chef’s Table so that I can cook for you some time soon.
